Fruit is delicious, and so good for you too. Lately smoothies have become very popular, especially since industrial strength blenders with single-serve cup attachments have become available. But, even for the avid smoothie drinker it can be hard for a once-weekly shopper to use all the fruit before it starts to turn. So what’s a smoothie lover to do?

I’ve got the solution. Buy two sets of fruit, and as soon as you get home, put one set in the fridge, and one straight in the freezer. That’s right! Then, when you run out of the fresh supply, you can open the freezer door and pop that frozen fruit right in your smoothie. This even cuts down on the amount of ice you need to use, or, conversely, can turn your smoothie into a soft-serve style snack.

For the smaller berries, you can just pop them right into the blender. For bananas, I find that I can use a sharp knife and just slice the peel right off, then cut into sections. If you’re buying peaches or other fruit with pits, you’ll be wanting to cut that fruit up first. Or, you could try buying bags of frozen peaches (individually frozen with no sugar added, of course).

If you notice as you go through the week that your fresh fruit isn’t getting used as fast as you thought, but it’s still good, you can pop those containers right in the freezer too. This is a great way to keep the grocery bill down, waste less food and still have the ingredients you need for your favorite smoothie readily available. Happy Blending!

Blueberry Pomegranate Mimosas

  • 4 ounces of your favorite Champagne, chilled
  • 2 ounces of V8 V-Fusion Pomegranate Blueberry Juice, chilled
  • In a fluted glass, pour the champagne. Add the V8 V-Fusion Pomegranate Blueberry juice. Then enjoy. This is a great drink because you can tell yourself it’s healthy, as it contains vegetable juice. Neat, right!

    Leftover Eggs? Make PopPop’s Deviled Eggs!

    Do you have leftover Easter Eggs? Wondering what to do with them? Try this simple deviled egg recipe.

    PopPop’s Deviled Eggs

  • 6 Easter eggs
  • 3 tablespoons light mayo
  • 1 teaspoon yellow mustard
  • pepper to taste
  • 1/4 cup sweet pickle relish
  • paprika to taste
  • Peel the easter eggs carefully. Slice in half lengthwise and put yolks in a small mixing bowl. Add the mayo, mustard, and pepper. Using a fork, smash the mixture around until mostly creamy. Fold in the pickle relish. Spoon the mixture into a piping bag (if you don’t have a piping bag, use a sandwich bag and cut off the bottom corner. Voila, piping bag!). Pipe the mixture into the halved egg whites. Sprinkle paprika to taste. Plate them up and serve them, but don’t be surprised how fast they go. Might want to double the recipe. Happy Easter!

    Do you have leftover bakery sub rolls? We did. This, according to Randy, is a great use for them. Quick french bread pizza. I agree!

     

    French Bread Pizza Recipe – According to Randy

    4 bakery sub rolls, sliced in half

    1 jar of pizza or spaghetti sauce, whichever you have

    1 package of shredded pizza cheese or mozzarella cheese

    1 onion, chopped

    1 can sliced olives

    1 package of pepperoni

    1 package of bacon bits

    Set oven to broil. Arrange rolls on a cookie sheet, sliced side up. Place in oven 5 minutes or until lightly browned. Remove from oven. Spread sauce evenly over rolls. Sprinkle cheese over sauce. Arrange t0ppings as you wish (feel free to add or remove per your liking. Onion, bacon and green olive make for a great pizza). Broil pizzas for 7 minutes or until cheese is bubbly.

    Frankie’s Chocolate Banana Smoothie

    Did you get a Ninja for Christmas with the single-serve cups? No? Have a bullet? No? Well, just use your regular blender. This is really good. I have this for breakfast most mornings, it’s my favorite.

    Chocolate Banana Smoothie Recipe (20oz size)

    1 banana, peeled and cut into 1″ pieces

    12 ice cubes, or whatever fits in the cup

    2 cups almond milk (I like Almond Breeze 30 calorie Unsweetened).

    1 tablespoon Nestle Quick Powder, No Sugar Added

     

    In your Ninja or Bullet single serve cup, or your blender jar, add banana and ice cubes. Pour almond milk over the cubes. Sprinkle Nestle Quick Powder over the top. Put the lid on the cup or blender jar and blend on high speed for 30-45 seconds. Makes about 20-oz. serving size. Yum.

    Running late? Got hungry kids? Here’s a quick recipe that’s healthier than take-out and easy on the budget. According to Randy, here’s how you make oven toasted ham n’ cheese sandwiches. They are good!

    Oven Toasted Ham n’ Cheese Sandwich Recipe

    6 Cheddar Cheese Bakery Rolls (Kroger or other Bakery)
    18 pieces smoked ham lunch meat
    6 slices American cheese
    1 small onion, sliced thin
    1 container of Stadium Mustard (or your favorite mustard)

    Set oven to broil. Slice rolls and arrange 3 slices of ham on the bottom half of each roll. Place 1 slice of cheese on top of the ham. Arrange sliced onions to taste on each cheese slice. Spread mustard on the top of each roll. Place the bottom and top halves of the rolls face up on a cookie sheet. Place the cookie sheet on the top rack of the oven. Cook 5-7 minutes or until cheese is melted. Place the top of the roll on the bottom of the roll and slice in half. Serve with your favorite soup.
